Breakfast Pizza
When most people have pizza for breakfast, this means the cold slices that are leftover from the night before. While that has some allure (or none at all depending on your point of view), breakfast pizza can be so much more.
A true breakfast pizza is a little like an omelet on a pizza crust. To get the basic idea, here is how to make a simple breakfast pizza:
Lightly scramble two eggs, making sure not to overcook them (they should still be just slightly runny). Layer them on top of your pizza dough. Add green peppers, onions, and diced tomatoes. Add some bacon bits, ham, or sausage. Sprinkle with some cheddar and American cheeses. Bake as usual. If you find that your eggs are browning too much, then add a layer of cheese directly onto the eggs, to cover them and keep them from becoming overdone.
